More about today’s guest: Michele is a professional sommelier, currently employed by Ca’ Apollonio Bistrot and Gourmet in Romano d’Ezzelino, near Bassano del Grappa. For him, the gourmet world was a real challenge, but now the restaurant is growing in popularity, as is its wine list. He completed the Master ALMA-AIS, with a final paper dedicated to the PIWI varieties. Studying about the PIWI led him to know Ca’ da Roman winery, the wine estate linked to Ca’ Apollonio hospitality project, completely and firmly devoted to the PIWI viticulture, through and under the oenological consulting of Nicola Biasi, the winemaker responsible for the winery.
