Hi Everyone, I'm Brian Sanders, and I'm making a feature length documentary called Food Lies which is about the sordid history of our dietary guidelines, the epidemic of chronic disease and obesity that followed, what the new science is telling us humans should actually be eating, and how to eat that food sustainably.

As I make the film, I'm talking to a bunch of experts who have graciously lent me their time to create this podcast. Actually, you can think of this as a free audio course on nutrition - all without ads. I'm doing this to support the Food Lies film which is now crowdfunding on Indiegogo.com.

Over the next 13 episodes you'll hear from some of the top experts in their field, specifically chosen to cover all areas of this complicated subject. There's so much conflicting health information out there, it's almost impossible to know who and what to believe. I quit my job and have spent the past year researching it from all sides, even veganism, and this audio series provides an overview.

By the end, all the confusion around health and what we should eat should make sense. I've looked at all the different approaches and figured out what the common truths are and what's BS. I now understand the unifying theory of nutrition that pulls together all sides - from Paleo to Vegan. Nobody is really talking about this - everyone is too busy being blinded by their tribe.

I've also put this research into practice, and now, at age 35, I'm in the best shape of my life. My vitals and blood work are flawless and I haven't been sick in 3 years. The same goes for countless family and friends, as well as millions around the world. I'm so excited to share this all with you.

The big thing I'm focusing on and I hope other people are as well, is keeping myself healthy and productive. We can make this into a vacation and mess around and eat bread and desserts and get all fat and sassy. Or we can use this time to cook delicious, healthy meals and do home workouts. We can get things done on to-do lists that have been sitting around for months, or we can watch Netflix. I'm having moments of pure unproductivity but I snap out of it and am actually taking care of things that have fallen to the wayside and feel pretty good about it. Hopefully everyone listening is staying motivated and optimistic and making the best of this situation. You certainly have the power to do so - it's up to you. I did this podcast with my new friend Dr. Aseem Malhotra a couple weeks ago and think he has some great info to share. He's doing some great things out there across the pond. Hello good people, we have a fun one today covering a lot of things. We covered so much we didn't even get to all the stuff I initially wanted to talk to Alex about. He had 2 good blog posts on Time Restricted Feeding and why we definitely should not restrict protein for longevity that we unfortunately didn't get to. A little news before we jump in - I joined Low Carb Denver as a speaker at the last minute. People are apparently pretty worried about this Corona Virus thing and some speakers dropped out. I am not worried, especially because of my super robust immune system due to eating a nutrient dense Sapien diet. Alex Leaf has a masters in nutrition, a teacher for the University of Western States' Human Nutrition and Functional Medicine master's program and was a writer and researcher for Examine.com He has a great blog where he breaks down topics simply and cites a bunch of studies to back it up. He's very into the evidence based approach to nutrition science and has some interesting takes on things. This wasn't a debate, but it could have been. I try to continually bring on people I don't necessarily agree with to make sure we hear all sides of things and don't get trapped in one way of thinking. I was pretty agreeable with him in retrospect which is what always seems to happen when I'm hosting a podcast. I realized after he was a proponent of standard diet advice - lean meats & dairy, eggs and fish as well as complex carbs. This is the thing - this can work for people and does fit within the Sapien Framework. Many bodybuilders still do this with success. The vast majority of athletes do this with success. When I was training for the Decathlon last year at UCLA this is what the athletes were doing (for all sports) and yes, they had top professionals using evidence based principles to advise them. The athletes thought I was insane for eating almost no carbs and doing a decathlon. So the story is, yes, you can be ok doing this and you can have whole carb sources (preferably not grains) We later get into cholesterol. I don't mean any disrespect, but Alex is not a cholesterol expert and please don't take his opinion on LDL as a fact or something I agree on. There's many guests in the past that have spoken on why LDL is not harmful including Ivor Cummins, Dave Feldman, Dr. Bret Scher, Dr. Paul Saladino, and next week Dr. Aseem Malhotra will be talking about this as well. So again, so I don't end up in an echo-chamber I heard what Alex had to say. I still don't think it holds much water. I've been reading/listening to Dr. Malcolm Kendrick for quite a while and a great episode just popped up on Paul Saladino's podcast with him about the real cause of heart disease and how LDL is not the problem. Allan Savory was born in Zimbabwe and educated in South Africa at the University of Natal, BS in Zoology and Botany. In the 1960s he made a significant breakthrough in understanding what was causing the degradation and desertification of the world's grassland ecosystems and, as a resource management consultant, worked with numerous managers on four continents to develop sustainable solutions. In 1992 Savory and his wife, Jody Butterfield, formed a non-profit organization in Zimbabwe, the Africa Centre for Holistic Management, donating a ranch that would serve as a learning site for people all over Africa. In 2009 Savory, Butterfield, and a group of colleagues co-founded the Savory Institute in Boulder, Colorado to serve the world through an international network of entrepreneurial innovators and leaders committed to serving their regions with the highest standards of Holistic Management training and implementation support. In 2003, Allan Savory received Australia's International Banksia Award "for the person or organization doing the most for the environment on a global scale," and in 2010 Savory (and the Africa Centre) received the Buckminster Fuller Institute's Challenge award for work that has "significant potential to solve humanity's most pressing problems." A TED talk Savory gave in 2013 has received over 10.8 million views and in 2014 was voted one of the 50 most intriguing TED talks of all time. Part 70 - Dr. Tommy Wood on How to Maintain a Healthy Brain and Body Into Old Age & Crush Life in the Present

Holy smokes were coming in strong with season 6. This one with Dr. Tommy Wood is pretty special. We also have the legendary Allan Savory next week. Get ready now by watching his world famous TED talk on YouTube. Dr. Tommy Wood is a full-time research assistant professor at the University of Washington in the Department of Pediatrics. The majority of his academic work has focused on developing therapies for brain injury in newborn infants. His current research interests include the physiological and metabolic responses to brain injury, as well as developing easily-accessible methods with which to track human health, performance, and longevity. He does this work through academic positions at University of Washington and the Institute for Human and Machine Cognition. Tommy received a bachelor's degree in Natural Sciences and Biochemistry from the University of Cambridge before studying medicine at the University of Oxford. He worked as a junior doctor in central London for two years after medical school, and then moved to Norway to complete a PhD in physiology and neuroscience at the University of Oslo. Tommy is the former President of the Physicians for Ancestral Health society and has also coached and competed in multiple sports including rowing, CrossFit, powerlifting, and ultra-endurance racing. He's got a strong foundation in many areas of health and I think his views are really valuable. Some people get hyper-focused on one or two things - which can be super beneficial and can lead to amazing discoveries. But it could also sometimes cause people to only look at things from one viewpoint or miss the forest for the trees. I love looking at all sides of nutrition and keep trying to evolve my views based on the almost 150 people I've talked to so far. It seems some people just take something that a super smart doctor like Paul Saladino says (who's a good friend of mine, and I mean no disrespect) and take it as the end all, be all. That's not going to work well in something as complicated as nutrition. I'll take his well-informed interpretation of the body of evidence and then go listen to another super smart and experienced doctor who believes in more plant-heavy approaches. And then try to make sense of it all. But I don't have it all figured out either! I'm just confirming my own biases and gravitating towards ideas that fit my views no matter how hard I try not to. The best I've come up with through all this is the Sapien diet. It will be ever-evolving as new information comes to light. Anyway, just listen to this whole episode, even though it's long. Part 69 - Mark Schatzker on the Hidden Secrets of Which Foods Are Killing You

Hi there friends. This is Brian Sanders who's name and photo is now featured on the cover of this podcast. I'm the guy who's making the Food Lies film which has taken up much of the last 2 years of my life. I've interviewed about 150 people now (both formally and casually) on topics of nutrition, health, exercise, and the environment. I'm also the guy that posts something every day on social media that interests me or conveys a point that currently has my attention. Let's get straight to today's guest, Mark Schatzker who is the author of The Dorito Effect and another book called Steak. I really enjoyed the Dorito Effect and have brought it up on multiple podcasts. His award-winng journalism has appeared in in The New York Times, The Wall Street Journal, Condé Nast Traveler and Best American Travel Writing. He is a field reporter for The Dr. Oz Show as well as a radio columnist for the Canadian Broadcasting Corporation. I really connected with Mark Schatzker in this episode on so many things. I'm really excited about this one and think it might help people to look at nutrition in a different light. Apparently we've both been thinking about some of these nuances in the same way for years. We talked for a while after we stopped recording and followed up on email as well. Some of it may be controversial, so I'd love to hear everyone's thoughts. There's so much going on when we talk about the concept of "processed foods." Even when I make a post about it, there's lots of confusion and pushback about what a processed food actually is. When I posted that the excess fat people carry is just the processed food they have eaten, there was an uproar. I still stand by this statement. There's 3 main components to what makes a processed food bad. The first is the diluting of good things like protein, vitamins, and minerals with empty calories like refined sugar, grains, and oils. The second is how those foods interact with your body. They can spike your blood sugar far more than whole foods, interact with your digestive system in different ways, and therefore affect hormones and satiety signals in different ways, as well as other inflammatory effects. The 3rd is the hyperpalatability factor which leads to overconsumption. Throughout history, food processing increased nutrient density. Modern food processing pretty much across the board decreases nutrient density. Therein lies some of the confusion. Sauerkraut is a processed food by most definitions. But for me, it doesn't fit the classical definition because it makes a pretty empty food like cabbage that has anti-nutrients (therefore potentially detrimental), into something nutritious with vitamin C, probiotics, and very little antinutrients through the act of processing - in this case fermenting. Other people didn't understand how King Henry the 8th, who was famously obese, could get that way without processed foods. Processed foods doesn't just mean McDonald's and Oreos! He had access to unlimited quantities of refined flour baked goods, sugar, and alcohol. These are the worst of the processed foods! Just because you made a cake at home with organic flour and organic agave, doesn't mean it's healthy for you. This also goes for a snack bar that is "keto approved" with all natural ingredients. Dr. Aseem Malhotra is becoming one of the most influential cardiologists in Britain and a world leading expert in the prevention, diagnosis and treatment of heart disease. He is successfully leading the campaign against excessive sugar consumption. The award-winning NHS cardiologist has successfully motivated leading academics, the media and politicians to make sugar reduction a health priority in the UK by publishing commentaries in the BMJ and mainstream media. Ben Bikman is a professor of pathophysiology and biomedical science at BYU in the physiology and developmental biology department and teaches in pathophysiology. His research focuses on molecular mechanisms that mediate the disruption that causes and accompanies metabolic disorders, such as obesity, type 2 diabetes, and dementia. He has a Ph.D in Bioenergetics at East Carolina University and did a postdoctoral fellowship with the Duke-National University of Singapore in metabolic disorders. Dr. Jaime Seeman (M.D. FACOG) is a board certified Obstetrician-Gynecologist with a background in Nutrition, Exercise and Health Science. She is also a current Fellow in Integrative Medicine and a Board Certified Ketogenic Nutrition Specialist. She did her undergraduate training at the University of Nebraska-Lincoln where she was a collegiate athlete for the Cornhuskers receiving many awards and honors. She then continued her education at the University of Nebraska School of Medicine where she received her Doctor of Medicine degree. She is a wife and mom to three little girls. [4:00] Dietary fat consumption has no effect on spiking insulin. [5:25] The obsession/fear with LDL cholesterol. [6:50] Saturated fat does not cause heart disease. Hello there beautiful people, I'm just getting back from an extraordinary weekend at the Metabolic Health Summit. It's an entire weekend of hanging around all the top researchers and doctors in this space and not only getting to see their latest research in the presentations, but getting to talk to them about it in person. I got 7 more interviews for Food Lies and I guess the 2nd film that will no doubt be made. I also did some really cool panel discussions that will go to YouTube. The first one was with crowd-favorite Dr. Ben Bikman, and 2 of my new best pals the lovely Dr. Jaime Seeman and Dr. Aseem Malhotra the renowned British cardiologist. The 2nd panel was with 2-time world champion rower and PhD Brianna Stubbs, 2-time world record holding ultra runner Zach Bitter, and 2-time hanging out with Brian nutrition, metabolism, and exercise physiology expert, Mike Mutzel. These will be out on YouTube soon and maybe as a podcast as well. So many great connections and fun things in the works, I can't begin to name them all. So on to the guests today.
