How to Design Cocktails That Are Irresistible with Fabio Pezzini, the Polo Bar, London

A hotel was destined to be our guest’s second home from the time he first stepped into one when he was a little boy. Now Fabio Pezzini is all grown up and behind the bar at one of London’s premier hotels right in the center of it all.

I’m Susan Schwartz, your drinking companion, and this is Lush Life Podcast, every week we are inspired to live life one cocktail at a time by the best in the industry.

The Polo Bar at the Westbury Hotel has seen and heard it all. From bowler hats to Beatles performing on the roof nearby on Savile Row, now the modern day fashionistas and Instagrammers. The windows lining the ground floor bar off of Bond Street are the perfect setting for any of his and his team’s cocktails. As Bar Manager, Fabio is guiding the Polo Bar into a new era and his journey from Verona to London will prove he is the one to make it happen.

Our Cocktail of the Week is the Bellinicus, a Polo Bar favorite!

Ingredients:

  • 45ml Italicus
  • 20ml Lemon Juice
  • 15ml Rose Syrup
  • 4ml Peach Bitters
  • Moët & Chandon to Top

Method:

Put all the ingredients in a shaker, add ice & shake. Strain into a Champagne Flute. Top with Moët & Chandon.
