Since 1987 he has dedicated himself to the family winery founded by his father, Arnaldo Caprai in Montefalco, Umbria, which at that time was only an area for DOC wines. In 1989, Marco launched the "Sagrantino Project" in collaboration with the University of Milan, with the specific goal of researching Sagrantino, a native grape from Montefalco which was pretty much unknown. From the very early stages of his career, he took on the role of Director for the Consorzio Tutela Vini DOC Montefalco and helped writing the regulations for the newly formed DOCG Montefalco Sagrantino, which will come in 1992. After this important milestone, Marco starts a very long journey, which still is ongoing as we speak, of taking on multiple roles for prominent institutions in the area of agriculture, promotion of the territory, culture and innovation. Confagricoltura, Milan Expo, Strada del Sagrantino just to name a few.
