Now, it’s time to revisit a recent cocktail we made with tequila for our cocktail of the week.

Jonnie’s Mezcal Tommy is our cocktail of the week. It comes to us from El Camion restaurant and bar in London. This bar is iconic in so many ways - not only the third stop on my Cocktail Tour of London, which will be starting up again this September, but also the last bar in which Dick Bradsell, the inventor of the Espresso Martini and so many other classic cocktails, worked.

Jonnie, one of the bartenders there, decided it was time to try making a Tommy’s Margarita with mezcal. This simple recipe shows that it works fine, better than fine.

INGREDIENTS

• 60ml Mezcal
• 30ml Lime juice
• 15ml Agave syrup

METHOD

• Add all of the ingredients to a shaker
• Add ice
• Shake, shake, shake
• Pour into a rocks glass with ice
