Since returning to Kazakhstan, she has focused on studying Italian wine and exploring its regions. Roza holds certifications as an Italian Wine Scholar (WSG), Langhe Wines Ambassador (BBA), and Valpolicella Wine Specialist (VEP). She is also a member of the Kazakhstan Sommelier Association. Welcome to Episode 1815. Today's episode is a recording of Prof. Scienza's seminar with Gabriele Gorelli MW, titled 'What does 'natural' mean in wine? How to engage wine lovers with science.' This is part 2 of 4. The seminar’s abstract: The European Commission has prohibited the use of the words “natural wine” on labels in Europe. Why? Primarily because there exists an underlying misunderstanding about what “natural” actually refers to in the wine sector. One side of the argument sees “natural” wines as those with zero interventions (i.e., no chemicals, no sulfites, no pesticides, etc.), while forgetting that the harvest, fermentation and bottling processes all involve human intervention. The other side of the argument says the only wines that are truly “natural” must be those made from wild vines with no genetic selection over time – and these wines simply do not exist. While both arguments can be viewed as extreme, both have at heart a desire for sustainability, care for the environment and attention to the health of consumers. Recent trends, especially among young/new wine consumers and often fuelled by social media, point to an emphasis on the desire for “wholesome” food and beverage products that demonstrate a respect for nature and consumers’ health. These trends are not new, but the escalation of focus on these issues has caused a battle with existing consumers who value and recognize the key sensory references basic to the traditional evaluation of wine. Producers of “natural” wines contribute to the confusion by ignoring both sides of the argument and insisting that their winemaking choices stem solely from their beliefs about how wines should be made. Is “natural” wine a myth? A marketing ploy? The darling of social media? If we focus on the “naturalness” of wine, do we risk foregoing ground-breaking research on precision viticulture, technique and technology that could represent the most effective way to enhance the terroir while respecting environmental and economic sustainability? How do we combat fake news and alarmism? We must address the great shortage of trainers and communicators who combine technical skills with the ability to make themselves not only understood, but also to fascinate those who listen or read. If you want to learn more about the Professor: The one who checks all the facts and regulates when we mistakenly type “Verdicchio” in place of “Vermentino.” Attilio Scienza is a full professor at the University of Milan in the Department of Agricultural and Food Sciences where he teaches courses on genetic improvements to the vine; he also teaches Viticulture in the Master’s program of the University of Turin in Asti. He has been the lead for many national research projects in the field of physiology, agricultural techniques, and vine genetics. He inherited an old vineyard from his grandfather Roman and he decided to realize his dream in the Goriška Brda Region. The cultivated grapes are the natives: Ribolla Gialla, Tocai Friulano and Malvasia Istriana. Of course, he followed the idea of Wine-Terroir and therefore the name of the wine is Brda, which is the Slovenian translation of Collio. The slopes are covered with terraced vineyards and the soil is called Ponca or Opoka. He has always loved macerated wines with spontaneous fermentation, and he has been experimenting with this method for years, now, Brda is the realization of it. After finishing his enology studies in Alba, he worked for three important wineries in the area, all the while continuing to help out his father and contributing to the conversion of the family farm to a full-fledged winery. In 1988 the first 5,000 bottles of Barolo, Dolcetto, and Barbera were placed on the market together with a small production of Chardonnay. However, the turning point came in 1993 when all the family’s grapes produced were vinified and bottled. In 1995 Sergio bought about two hectares of Cerretta and started the challenge of producing white wines in Alta Langa, planting the first vineyards of Chardonnay, Reisling in Cigliè. In 1997 he married Elena Bonnelli who has given great support to the winery, helping Sergio with business administration as well as hospitality. The family then grew with the joy of the birth of two children: Elia born in 1998 and Maria born in 2001. After a few years, Sergio purchased another hectare in the vineyards of Prapò (2002), Lazzarito (2002), and Pradone (a parcel of Lazzarito) and also another parcel in Cerretta(2001). In 2010 Sergio’s mother inherited from her cousin Tommaso Canale half of a hectare in the most historic and famous vineyard of Serralunga d’Alba: Vigna Rionda. Sergio’s goal is to express the territory and the character of the various vines, trying to express elegance and finesse in the wines, which as a Piedmontese tradition, are generally combined with gastronomy. After graduating from St. Helena High School he attended Napa Valley College before transferring to Sonoma St University. Sam has been active with philanthropic organizations for decades including in his hometown with the St. Helena IOOF Lodge. He also volunteered for the Napa Valley Wine Auction, Yountville Veterans Home and the Napa Valley Film Festival. After 15 years in the wine industry through Napa and Sonoma counties, Sam and his wife moved to the Willamette Valley in the summer of 2016.
