He is a professor of Food Science and Biotech in Belgium. His research areas include animal sourced foods, fermented foods, and nutrition.

In this discussion, Drs. Brian, Tro, and Frédéric talk about why/how meat became so controversial, the ancient and vital innovation of fermented meat, the difference between real science and institutionalized science, the religious influence behind much of the demonization of red meat and the promotion of plant based foods, technocracy and its effects on nutritional dogma, academic bullying in the nutritional research space, big food lobbying, and changing the nutritional landscape by empowering people with information.
