Today, I am blessed to have here with me Michael Goran. He is a Professor of Pediatrics at The Children’s Hospital of Los Angeles, which is affiliated with the Keck School of Medicine at the University of Southern California. He is Program Director for Diabetes and Obesity at The Saban Research Institute and he holds the Dr Robert C and Veronica Atkins Endowed Chair in Childhood Obesity and Diabetes. Dr Goran is a native of Glasgow, Scotland, and received his Ph.D. from the University of Manchester, UK (1986) and has previously served on the faculty of Medicine at the University of Vermont (1991 to 1994), the Department of Nutrition Sciences at UAB (1994 to 1999), and the Department of Preventive Medicine at USC (1999 to 2018) prior to joining Childrens Hospital of Los Angeles. His research has been continuously funded by the National Institutes of Health and other Foundations for the past 30 years and he has published over 350 professional peer-reviewed articles and reviews. He is the Editor of the “Childhood Obesity: Causes, Consequences and Intervention Approaches” published in 2017, co-editor of “Dietary Sugars and Health”published in late 2014, and currently serves as Editor-in-Chief for Pediatric Obesity. He has been the recipient of a number of scientific awards for his research and teaching, including: The Nutrition Society Medal for Research (1996), The Lilly Award for Scientific Achievement from The Obesity Society (2006), The Bar-Or Award for Excellence in Pediatric Obesity Research, from The Obesity Society (2009), the TOPS award for contributions to obesity research from The Obesity Society (2014), and the Rank Prize Lecture in Nutrition (2018). Michael lives in Silverlake, Los Angeles with his wife Lori, a film editor, his 2 teenage daughters, and their cat, Hugo Moon. Outside of work, Michael likes to play tennis, and hang out with his family which typically involves cooking, eating, going on walks and travel. [00:30] Why Michael Decided To Focus on Sugar Addiction Towards Children Michael has been doing sugar addiction in children research exclusively for the last 30 years. Michael wanted to learn about chronic diseases and how they started in childhood. At the end of the day, he found a lot of very interesting information about sugar and how to modify it. Michael wanted to get that information out there to the public. If someone is diabetic, that didn’t happen over the past year. Instead, they have been eating a poor diet for the last ten to fifteen years. Babies are actually born with a built-in preference for sweetness. It’s supposed to help them seek out good-tasting foods. Food companies know that babies and kids prefer sweetness. So that's why 80% of kids’ foods have some type of added sugars. Breast milk does have carbohydrates. Lactose is built from glucose and galactose. However, there's no fructose in natural mother's milk. It's the introduction of fructose that starts to cause problems as well as added sugar. [07:50] When Moms Should Start To Wean The Baby Off of Breast Milk The recommendation is six months. However, there are studies that demonstrate the longer the duration of breastfeeding, the more likely you are to prevent obesity. Plus, the longer you breastfeed, you will promote brain development. If a mom breastfeeds for more than twelve months, those babies are highly protected from obesity, even if they consume high amounts of sugary beverages as a toddler. [10:55] A Calorie Isn’t Always A Calorie: 90% of Fructose Is Cleared By The Liver Sucrose, which is ordinary table sugar, is what we call a disaccharide. It's a glucose molecule connected to a fructose molecule; both are identical chemically. Glucose is used everywhere in the body for energy. The liver filters out almost 90% of fructose. The liver's job is to filter things out that it doesn't want in the blood. The liver will take fructose and convert it to fat. The most common form of liver disease is nonalcoholic, and that nonalcoholic contributor is fructose. [18:10] Recommendations For Adults and Children Who Have Nonalcoholic Fatty Liver Disease Sugar elimination can rapidly deplete the liver of its fat quite quickly. It only takes seven to eight days. That’s why Michael has a seven-day no added sugar challenge. It’s a great way to get fat out of the liver. Kids need to reset their bodies and taste preferences. Weight loss is also important for nonalcoholic fatty liver disease. We get so amped up on sugar, we begin to crave it more and more. Cut it out! [21:00] There Are Over 200 Names For Caloric Sugars The current count is about 260 or 270. Food companies are developing healthy-sounding names for sugar. Here are some examples: Organic brown rice syrup Evaporated cane juice Agave nectar Fruit juice concentrates Some of the fruit sugars can have even more fructose and high fructose corn syrup. Gatorade is a fake healthy drink. [23:40] What’s Happening To Children When They Consume Less Sugar Kids are more intelligent if they eat less sugar. With less sugar, kids can expect to have these benefits: Perform better on academic tests Better memory Better sleep More focus [32:15] How Much Fructose Is Really In Coca-Cola? Michael Did The Research Michael wanted to know what was in Coca-Cola. Products say high fructose corn syrup; we don't actually know what that is. The food industry says it's marginally more fructose than glucose in their products. Michael went to the supermarket and got all kinds of drinks. He sent them off to the lab. About 65% of the sugars are fructose. Michael presented this information six years ago. The food industry told him that his research was invalid. However, they couldn’t prove how. Remember, more fructose causes a lot of problems in the body. [35:25] True or False: It’s Impossible To Be Addicted To Sugar Here are some of the criteria for addiction: Withdrawal Side effects Difficult to give up If you look at the criteria for addiction, they stand true for sugar. It makes no sense that qualified professional dietitians would say that sugar is not addictive. About 40% of the Academy of Dietetics and Nutrition funding comes from big food companies. [45:15] What’s Next For Michael In 2022 Michael is wondering why certain populations have the highest rates of obesity, diabetes, and fatty liver. Today I have here with me, T.J. Robinson, aka "The Olive Oil Hunter ®," is one of the world's most respected authorities on all matters olive oil. Known for his “platinum palate,” he is one of the few Americans invited to serve as a judge in prestigious Italian olive oil tasting competitions.   These days he is dedicated to importing rare fresh-pressed olive oil, the most flavorful and healthiest extra virgin olive oil on the planet, until now virtually impossible to obtain year-round in the U.S. All his oils are independently lab tested and certified for 100% purity.   T.J. serves as a personal “olive oil sommelier,” traveling the world, following the sun, seeking out only the best-tasting oils and acquiring them for his Club members right during the olive harvest, as the olive presses are running, when the oils are miraculously flavorful —like no other olive oil you can find in the U.S.   In this episode, T.J. opens the show describing the difference between his olive oil and mass-produced oils. The highest quality olives should still be green, whereas bulk producers will use overripe olives because of the high oil content. Then, T.J. explains the process he goes through to harvest olives and how much work goes behind creating his blends. Robinson J. joined a harvest party with a Sicilian family in Italy. The moment T.J. tasted fresh olive oil, it changed his whole life. Fresh olive oil could change the world, people’s diet, and their health.   [04:30] The Difference Between T.J.’s Olive Oil and Mass-Produced Olive Oil Bulk oil is made up of oils from different countries. When you look at the label, it may have five or six different countries on it. There is very little care with these oils. Some bulk oils can sit in vats for years and years before ever making it to your pantry. J. works with small family farmers who do not have access to the United States market. It is a highly curated collection, following a seasonal harvest. After trying hundreds of oils, T.J. makes test batches and eventually sends the oils out to his club members. The health qualities cannot be compared between T.J.’s olive oil and bulk olive oils.   [08:20] About the Olive Harvest There are over five hundred different olive varieties in Italy. After playing with the varieties, T.J. creates blends. The ripeness of the olives will alter the flavor profile. As the fruit goes from green to black, more oil is created inside the fruit. If the farmer is producing oil for bulk oil, they will leave it on the tree for an extra few months. During this time, it goes from 10% oil to 30% oil. The health-promoting qualities of olive oil are the greatest when it’s super green and not as ripe. Harvesting the fruit when it’s green is not as cost-effective as harvesting it when it’s overripe. Bulk producers harvest when it’s overripe because it produces more oil.   [17:30] Staying Satiated   Olive oil is one of the best fats for staying satiated. Ben will take a shot of olive oil as a crutch when fasting. J.’s olive tastes so good that you can drink it out of a shot glass. The media is finally picking up on the good fats in olive oil. They realize the younger olive oils are better.   [21:00] The Myth About Cooking With Olive Oil Myth: you shouldn’t cook with olive oil. The antioxidants in fresh oil protect it from oxidizing, whether it’s in the body or the frying pan. J. heats his pan first, at the very last minute, T.J. will add his oil. Do not let the oil sit and burn.   [26:40] Taste-Testing Olive Oils Professional taste-testers drink olive oil out of white cups. The color is an indicator of quality. Quality olive oils will have a green tint. Then, swirl the oil and put the cup in the palm of your hand to warm the oil. The first evaluation of the oil will be on the nose. When it is extra-virgin, the oil goes through a professional tasting panel and a chemistry panel. Take a whiff of the oil. You should notice that it smells like being in a vegetable garden. After you have smelled the oil, it is time to place a teaspoon of oil on your palette and chew the oil. T.J. tries to draw a little air in when he tastes. During this, you are looking for bitterness and spiciness. You should feel a tingle in your throat.   [35:20] Uses for Olive Oil Ben takes a shot of olive oil to stay satisfied. He also uses it for eggs, salad dressings, and sautéing vegetables J. likes to use it as a finishing oil. It would be best if you used it as a sauce and can use it to roast vegetables. He also is a certified functional medicine practitioner through the Institute for Functional Medicine. He attended medical school at the University of Arizona, where he worked with Dr. Andrew Weil focusing on integrative medicine and nutritional biochemistry.   Prior to medical school, Dr. Paul worked as a physician assistant in cardiology. It was during this time that he saw first-hand the shortcomings of mainstream Western medicine with its symptom-focused, pharmaceutical-based paradigm. Dr. Paul decided to return to medical school with the hope of better understanding the real roots of chronic disease and illness, and how to correct and reverse these. He now maintains a private practice in San Diego, California, and sees clients from all over the world virtually.   In this episode, Dr. Paul Saladino explains how he started in the health world – he always had a strong desire to be responsible for his own body. Dr. Paul defines the carnivore diet. The diet cuts out all plants and is entirely animal-based. By removing plants from your diet, plant toxins will also get cut out. Dr. Paul reveals which plants should be removed from your diet because of toxicity. Stop eating seeds, leafy greens, and sweet fruits to avoid nasty toxins. When he got sick, he also wanted to be able to fix his health. “We are part of this bodily machine. I want my machine to be as tuned as can be.” – Dr. Paul Saladino Paul didn’t want to go to the doctor to find out that he needs medicine, and just have to believe that. He wants to be the agent of his health and his family’s health.   [13:30] About the Carnivore Diet It’s a diet that is entirely based on animal foods and excludes all plant foods. There’s a version of the diet that does include some plant foods. Anything you can hunt is going to be animal food. Carnivore diets exclude plant foods and appreciate the spectrum of plant toxicity. Paul gives people the tools to make the right choice for them. When Dr. Paul made the transition from paleo to carnivore, he cut out all the plant foods. There are toxins in plants that he completely eliminated. Plant toxins can be damaging to the gut. Leaky gut is gaining more widespread acceptance.   [21:00] The Practice of Fasting Paul is at the weight he wants to be at. He does not use fasting as a tool. Fasting can be used as a valuable tool. We need to be careful about how we use it. For some people, fasting may be too much.   [22:30] The Carnivore Code The book is entirely written with 425 references. Paul wants the book to be readable, yet he wants to include all the science. You can preorder The Carnivore Code here. Paul’s favorite thing about the book is the anthropology. The first part of the book is all about humans.   [33:10] Plant Toxicity Spectrum   Plants and animals have been coevolving. Plants have always been absorbing toxins. The seeds of plants are most vulnerable. Grains, seeds, beans, and nuts are all seeds. If a plant is putting energy into making a reproductive part, they are going to put the most toxins in the seed to prevent them from consumption. If a plant is full grown and you eat one or two leaves, it won’t kill the plant. Eating the seeds will kill the future of the plants. Paul says not to eat all the nuts as most keto followers do. Other high toxic plants are spinach, rhubarb, beets, and almonds. Eliminate all seeds, leafy greens, and sweet fruits.   [46:15] Living a Radical Life A radical lifestyle includes occasional fasting, low-carb diet, exercise, sun, cold, and heat exposure. These activities will result in optimal antioxidant status and longevity genes. We do not need plant molecules for longevity genes. We can take anti-inflammatory medicine; however, there are long-term effects of medicines. We do not need many plant molecules because there are adverse side effects, just like medicine.   [50:00] Side Effects to Eating Animal Meat Animals do not make defense compounds like plants do. Animals have the ability to defend themselves. The majority of animals do not have toxins in their muscles. The cooking of foods will create toxins for humans. The lower the temperature you cook, it will lessen the cooking toxins. The higher the temperature and the faster we cook, the higher the chance of toxins. Grain-fed meat is going to be higher in toxins. We will bioaccumulate pesticides and mold.   [54:50] The Problems with Game Changers Listen to Discussing The Game Changers w/ Dr. Paul Saladino Game Changers relies on nonscientific experiments with shock value to prove their point that plant-based diets are healthier. Game Changers did not present the athletes honestly. Vegan diets are not giving people superpowers in the athletic realm. Today, I have here with me, Mike Mutzel, YouTuber, podcaster, and teacher of leading-edge science that can be utilized by progressive clinicians for the prevention of chronic disease. Often termed Translational Medicine, this bench-to-bedside approach is critical to ensure the application of pioneering research and concepts in systems biology, a preventative health care setting, optimizing patient outcomes.   Mike earned his B.S. in Biology from Western Washington University in 2006 and completed his M.S. in Clinical Nutrition from the University of Bridgeport in 2015 and is a graduate of the Institute for Functional Medicine’s (IFM) Applying Functional Medicine in Clinical Practice (AFMCP).   He is a Functional Medicine consultant in the natural product industry and has worked as a nutritionist with Gerard Guillory, MD of the Care Group, P.C. in Denver, CO. Mike has lectured alongside Dr. Guillory to large patient-groups in the Denver area, and they have been featured on local T.V. programs discussing the power of Nutrition and Functional Medicine.   In April of 2014, Mike published his first book, Belly Fat Effect: The Real Secret About How Your Diet, Intestinal Health, and Gut Bacteria Help You Burn Fat.   In this episode, Mike Mutzel describes how he started in the health world and why he is so attracted to gut health. Mike explains the importance of a diverse diet and how seasonal eating could be the key to health. Plus, bile is essential for healthy digestion and absorption of fats. Stay tuned for Mike to talk about the problem with Game Changers and how to utilize our parasympathetic tones.   [00:30] About Mike Mutzel Mike got involved in the health world when he started bicycle racing. For the first time in his life, Mike felt depression - he didn’t know what was wrong with him but knew he needed to test his hormones. Mike’s testosterone was extremely low. He started to find out how the food he was eating was affecting his testosterone levels. Overtraining can also affect testosterone. Mike works with doctors to help their patients with diet and lifestyle changes. His YouTube channel launched in 2012. Don’t be afraid to put out YouTube videos; you are going to get better over time.   [11:30] About Our Guts All the crappy foods we eat are high in calories and carbohydrates. They also perturb our microbiome. Microbiome contributes to the inflammatory tone in our bodies. If there is an imbalance, our immune system will also be out of whack. When we eat carbs, and our blood sugar goes up, that is only part of the story. Our brain is connected to our gut. The mechanical exposure to foods affects the different cells. Before we swallow things, our body is anticipating the food. If we train our brain to chew food mindlessly, then that is what will keep happening. We need to slow down, chew our foods, and put down the forks. Fasting will also come into play. We do not need to eat every two to three hours. “A lot of people don’t even know if they are hungry or not anymore.” -Mike Mutzel   [18:15] The Importance of a Diverse Diet A lack of diversity is a lack of stability. People with allergies seem to fair better with a low-carb diet. It’s exactly the opposite of what many people thought five years ago. We cannot totally manipulate our diet to have massive swings in the immune system. Be mindful of ketones, and keep track of your vitals. There are healthy people with low diversity and unhealthy people with high diversity.   [21:45] Seasonal Eating Mike personally emphasizes seasonal eating. He is grateful and fortunate enough to have the financial resources to eat seasonally. Some people do not have the income or resources to eat seasonally. Seasonal eating is an essential piece of the puzzle. Even though blueberries are considered a healthy food; it’s healthy food out of context. Once you get the fast food out of the house and prioritize sleeping, then you can start thinking about eating seasonally.   [33:00] The Importance of Healthy Bile   Bile makes it all the way to the heart and the brain. Bile is so important and underutilized. Mike promotes bile salts. When people are constipated, recirculating bile is not healthy.   [37:10] The Problem with Game Changers The movie is compelling, and loads of people are convinced to go vegan. Mike has tried a vegan diet; it doesn’t accelerate recovery. On a vegan diet, our cells do not regenerate faster. Mike has no problems eating vegetables and fruits. You didn’t see any of the food people ate until the credits. The foods they were eating were a lot of grains.   [44:30] What is the Parasympathetic Tone? Our nervous system has two personalities. Fight or flight mode and relax mode. So many people are hung up in the fight or flight mode. We need to be proactive about unwinding our fight or flight mode. Yoga and meditation are effective and unwinding our fight or flight. There are anti-inflammatory properties when we are in the parasympathetic state.
