She is one of a new generation of researchers arguing that diets lower in carbohydrates are a scientifically sound approach for reversing nutrition-related diseases. For more than half a century, we’ve been told to eat a diet high in grains, low in fat, saturated fat (and cholesterol), but the last two decades of research have led a growing number of scientists to conclude that this diet, despite being rigorously tested, could never be shown to prevent any kind of disease. Teicholz’s work also explains why this diet has remained official policy for so long: the roles played by crusading scientists, the food industry, and more. During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media. [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains. Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it’s better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation. [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s. The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer. A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower’s doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease. Plus, Ancel Keys got his ideas adopted by the American Heart Association. Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021. [23:00] Why Are Seed Oils Approved by the American Heart Association? How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats. There is no data to justify the authorities' limits on these seed oils. It’s challenging to trust the government with our health when they recommend seed oils. [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans Nina did not know how controversial red meat was until she put a picture of it on the cover of her book. Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet. Meat was developed by humans in order to have a convenient and cheap source of protein. [33:15] Myth: Meat Causes Diabetes Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs. Where's the sugar in meat? It's just nonexistent. It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control. [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat. [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon. Many vegan burgers have vegetable oils that are not healthy. [41:30] Myth: There’s a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease. Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science. [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. Nina says that smoking is probably safer than processed sugars or vegetable oils. Between sugar and vegetable oils, Nina says that vegetable oils are safer. [00:30] About Dr. Killen Killen worked in an emergency department for ten years total. She suffered from both stress and sleeplessness. At the same time, Dr. Killen was seeing patients with the same complaints. Amy realized that she couldn’t help her patients until she helped herself. Amy learned about regenerative medicine and decided to quit the emergency department. In the ER, you deal with what you have right in front of you. In regenerative medicine, you focus on five or ten years before disease onset. It may take even a year before her treatment is effective. Killen focuses on skin, hair, and sexual function. [03:30] About Stem Cells Everybody already has stem cells! They are the master cells of your body and are present in every tissue of your body. Stem cells are responsible for the upkeep of your organs. They can send out signals to heal and regenerate. As we get older, our stem cells become less functional. Sometimes, we can lose stem cells in parts of our bodies. We have the ability to activate the stem cells that we have through exercising, fasting, and stem cell treatment. There are signs if you do not have enough stem cells in your body: knee pain, your skin is losing texture, and other things that we associate with aging.   [05:55] Using Fasting to Activate Stem Cells You can activate stem cell production in your body by fasting. Without food, your body will go through stress, and your cells will start to repair. People use fasting to keep their stem cell stores high, so they are more readily able to repair themselves when they need to. The body will clean or get rid of zombie cells. Then, it produces a signal to create new stem cells. Stem cells can multiply and replicate themselves. If you can do multiple day fasts, that would be ideal. Time restrictive feeding is better than doing nothing. Start slow, then work yourself up to several days at a time. [09:00] How to Trigger Cell Production Exercise will trigger cell production. Red light therapy or light therapy will increase stem cell production. Stress-relieving things will also increase production like Tai Chi. Killen wouldn’t be surprised if there were a correlation between meditation and stem cell production. The procedures that Dr. Killen does are not system-wide. She does not treat diseases; she only treats certain areas like joints. If you can put stem cells into your joint, then it will repair that one area. That’s the same with skin, hair, and sexual organs. She takes stem cells from the patient and moves them to a different part of the body. Your love handles have a good supply of stem cells. Plus, they heal faster and have less pain for the patient. [12:20] The Role of Insulin on Aging    High insulin is associated with high cortisol levels. When you have high insulin, your blood sugar is also high. High sugar levels will result in aging. Every part of your body is sensitive to sugar. It will age you faster and cause more inflammation. When the insulin is activated, all your fat-burning hormones are scattered. It could be years before insulin issues are shown in blood results. It’s essential to be proactive rather than reactive. [14:40] Anti-Aging Tips Increase nitric oxide. It’s the primary way to get blood delivered throughout your body. After age 40, we don’t make as much nitric oxide. It affects sexual performance and gym performance. Things you can do to increase nitric oxide: Exercise Eat nitrate-rich foods Don’t use an antiseptic mouthwash Avoid using acid-blocking medications Red light therapy Coconut oil is antibacterial. Dr. Killen says it’s not as problematic as daily antiseptic mouthwash. You can make your own mouthwash. Don’t use it every day. You need the bacteria in your mouth. Use the sun wisely. Protect your face and hands. People who don’t get any sun exposure is a risk factor for death and aging. Getting sun is really important; don’t get burned. Don’t eat sugar. Make sure you are pairing the sugar with fat and protein if you do eat it. Your body thinks a big bowl of rice is sugar. If you are going to eat rice, pair it with loads of fat and protein. [22:15] Fixing Dark Circles Under Your Eyes Avoid allergens. PRP injections can also make a big difference. It will help thicken the skin. Different kinds of lasers can be helpful around the eyes. It’s one of the more difficult things to treat. [24:50] Sexual Health Therapies Killen does a P shot for men and an O shot for women. It will help increase blood flow and repair nerves. Plus, it will increase sensitivity and sensation.   [28:20] What is Perfect Health? You’re not thinking about pain or performing. It means you are not worrying about if your body can do something. You should be able to do what you want to do and be with who you want to be with. [01:00] About the Cell Membrane The cell membrane is a biological membrane that separates the interior of all cells from the outside environment. We attack our cell membranes every single day with the food that we consume. Our food is leading us down the path of chronic disease. The Standard “stupid” American Diet has been imported to many countries around the world. Our membranes have two layers of lipids. The fatty acid composition determines how fluid, penetrable, and how the cell functions. No one talks about how the cell membrane functions. It’s a rapidly moving system. Your body is really good at distributing fats around. Good or bad fats take about 10 or 20 minutes to distribute throughout the body.   [07:40] The Job of Receptors Receptors are how cells will communicate with one another. Type 2 diabetes is insulin resistance. When cells are unhealthy, the receptors will be less active. Morbidly obese men have man boobs because their membranes are in poor health. A female can have a normal thyroid yet still feel like crap. Doctors are looking at health in the wrong way – they only test the blood to determine if someone is healthy or not. [10:55] Communication Between the Receptors and the Nucleus When we start altering the function of the receptor, we will begin to modify the gene expressions. Now, we will have changed responses, and the signals will get crossed. We won’t be able to react normally to environmental factors. We see this all the time in obese people; they have altered gene expression. People who are overweight don’t normally react to hormones. These people eat something, and they should feel full, but they don’t. If a cell has altered membranes, then it is asking for help. Inflammation is a call for help! [16:30] The Correlation Between Oxygen, Omega-6, and Our Cells Oxygen oxidizes things. Oxygen cannot sit freely in the cell. Omega-6 will take oxygen to the mitochondria. Omega-6 is extremely important! It’s predominant in our diet because it’s supposed to be. No life exists without omega-6. The processed omega-6s are pure and unadulterated poison. If you do not give your body proper fats, you will not do well. I repeat, you cannot do well without good fats.   [25:40] Vegetables Oils and Cancer Smoking rates are as low as they have been in sixty years. However, cancer rates are well over 60%. In 1900, cancer rates were at about 3%. You can’t have something to increase that high in six generations. Vegetable oils are causing our cancers. They are hidden everywhere. If you go to Whole Foods, you will see vegetable oils in loads of things. We should never make an exception for vegetable oils. Try to eat clean for one month. Everybody will cheat. What happens when you cheat, your body will tell you that something bad has happened. Remove the inflammatory fats. [30:20] Add Good Fats to Your Diet Seed oils are the best. Pumpkin seed, sunflower, coconut, and flaxseed oils are good. A lot of oil bottles say they are cold-pressed. However, they need to be cold-pressed in the absence of oxygen. If there is oxygen, the oils will become rancid. Once the oil is sitting on the shelf, they are getting damaged. Find good fats that are protected from oxygen. You can get almonds and other nuts that have good fats. If you are roasting nuts, the function is destroyed. Hospitals should never manage chronic diseases. Bush realized that he needed to go down a path that would make a difference with heart disease. This led him down the road of endocrinology. During his cancer research, Dr. Bush understood that he needed to learn nutrition because he didn’t get any formal nutrition education. Bush eventually started a nutrition center to reverse heart disease. He decided he would save rural Virginia. If he can figure out how to fix the small rural towns, then he would be able to scale it for the whole world. During his journey, Dr. Bush started to study soil. He realized that food is an essential connection for gut/brain communication. [11:30] What Happens When We Don’t Fast Gut motility starts to freeze up with age. At 18 years old, people who ate two slices of pizza, it took 14 hours to get through the small intestine alone. If you’re eating three meals a day, it stresses the body and destroys the gut motility. It will set up chronic disease. When you get stressed in the liver, you develop fatty liver very quickly. With a plant-based diet, it only took ninety minutes for the food to move through the small intestine. Protein has nothing to do with ketosis. Too much protein can actually disrupt ketosis. If you’re eating real and unprocessed foods – the mix is magical for the small intestine. [18:20] Public Health During Quarantine The last thing you want to do for human beings is isolating them. As soon as you stop moving, your sleep cycle will shut down. Americans are already overdosing on couch time and screen time. What have we done wrong to create a pandemic? It’s the food system. Our food system has destroyed the integrity of our planet. [23:45] Having Panic Attacks After Lunch One of Dr. Bush’s patients would have massive panic attacks after lunch. The symptom of a panic attack is the overwhelming feeling of impending doom. For lunch, she ate rice or chicken salad. She realized she only had panic attacks when she ate the chicken salad. It turns out, the chicken had a lot of stress, and it was transferring that to the human. The chicken also was experiencing an impending sense of doom before it was killed. The human starts triggering the same sense of impending doom. Corn is a beautiful plant. However, there is no biodiversity on the ground. All they allow is GMO corn. It is the factory chicken farm version of corn. Biodiversity creates more diverse returns. Corn would be better with biodiversity around it. Even weeds are beneficial to the soil. If you destroy the weed, then you destroy the biodiversity. [48:55] Disease is Linked to Mother Nature    We are creating monocrops that create monocultures in the gut. We are starting to become allergic to the food we are feeding ourselves. We need to teach our farmers how to farm the right way. That way, we can give the body what it wants and reverse the trends. The gut is an organic garden. The same rules and recovery rate that we see on a farm will happen in the gut.   [51:40] Finding Yourself With Your Gut When your gut is healthy, you will start to have a healthy life. So on a Fast Day when you’re eating less, you’re not generating that ‘central heating.’ Also, your body is very good at protecting your vital organs, which means if you’re not eating as much, it may sense that and prioritize them, so your extremities (hands and feet) cool down. Dutch research suggest cool temperatures can help with weight loss. The good news, is that your body actually burns calories maintaining a stable temperature, so you’re likely to be using energy that way. This fascinating Dutch research even suggests that turning down the central heating could help us stay slim. https://www.bbc.com/news/health-25849628 "Having the central heating on may be contributing to our ballooning waistlines, Dutch researchers suggest. They say higher temperatures in homes, offices and hospitals provide more comfort, but mean bodies no longer need to burn extra calories to keep warm. A Maastricht University Medical Centre group says 19C (66F) is sufficient to provide the right balance.” How fasting burns fat cells and activates brown adipose tissue (BAT). When you are in a fasted state, it means your body is burning fat. When going through a fast your body will activate brown dispose tissue. It is brown because it is mitochondrial dense. White fat is not good. Blood rushes away from muscle tissue to brown fat, brown fat seeks white fat. Woo hoo. When you fast, especially in the beginning your core body temperate will decrease. This Nature study took a look at fasting mice and found white adipose tissue converted to brown fat. What you are feeling is the effect of fat migrating in the body. https://www.nature.com/articles/ncomms11533 Another reason why you are cold during a fast, Orexin; this is a neurotransmitter. Credit to Thomas DeLauer for this research A study found fasted mice with suppressed levels of orexin had a lower body temperature. What can you do? Caffeine has been shown to increase levels of orexin. Everyone has different levels of orexin which can explain why some get cold and others don’t. Coffee would be a great option to have during a fast. Additional solutions to feeling cold when fasting. Vitamin B1 in the form of nutritional yeast may help. Other keto sources of B1 are salmon, squash and asparagus.
