[00:50] Dr. Paul Saladino Talks About His Appearance on The Doctors Before Dr. Paul’s appearance on The Doctors, he was told it would be a debate. They had five doctors and one lawyer. Plus, they had a vegan doctor to argue against Dr. Paul. There was a lot of yelling, and Dr. Paul was barely given a chance to say what he needed to say. Eventually, Dr. Paul was getting a lot of muscle cramps, and he was getting heart palpitations at night. So, Dr. Paul started to reintroduce carbohydrates into his diet. First, he started to introduce honey into his lifestyle. After incorporating honey, Dr. Paul started to feel better. Blood sugar will spike when you include carbohydrates in your diet, especially honey. However, Dr. Paul’s blood glucose tracing was very low. [22:50] Why Dr. Paul Doesn’t Like The Term Insulin Resistance Paul doesn’t like the term insulin resistance. He thinks metabolic dysfunction is a more precise term. He doesn't like to say insulin resistance because two types of insulin resistance are often confused and conflated. The first type of insulin resistance is physiologic insulin resistance. Humans have evolved a state known as ketosis, which goes hand in hand with physiologic insulin resistance. Then, there is pathological insulin resistance. Many people who exclude carbohydrates will see improvements in their physiology. [34:50] The Importance of Decreasing The Amount of Linoleic Acid In Your Diet Many people should decrease the amount of linoleic acid in their diet. We have to understand how much linoleic acid is in the foods we eat as humans. Soybean oil has 45 to 50% linoleic acid. Butter and tallow, which has rendered animal fat from cows, will have much lower levels of linoleic acid, around 2%. The composition of our cell membranes takes a long time to change. So, breaking down the linoleic acid will take a great deal of time. A low carbohydrate approach will help lower the linoleic acid in your diet. [40:00] What Happens When We Consume Too Much Linoleic Acid When we eat more linoleic acid, we can find more oxidized LDL. The oxidation and the instability of linoleic acid is one of the problems. There could be some potentially hormonal roles for linoleic acid that are negative as well. The underlying thing to consider here is an evolutionarily appropriate diet for humans. We consume much more linoleic acid than we ever have. [47:25] Should You Be Taking Fish Oil on The Ketogenic Diet? Fish oil spoils extremely fast. These oils are so fragile, and we're putting them in capsules, and we're presuming that they're not oxidized. The only place Dr. Paul is getting omega-3 is essentially from ruminant animal fat. Paul is not convinced that omega-3s are that beneficial or that we should be pumping ourselves full of them. There have been millions and millions of humans that have no access to coastal foods; they did just fine from eating land animals. [64:35] You Want To Push Your Linoleic Acid Consumption As Low As Possible Paul says to keep your linoleic acid consumption as low as possible. The human body can't make omega-6, but there's omega-6 in everything. The linoleic acid composition of a mother's breast milk changes based on their dietary consumption. If you look at the hunter-gatherers, their linoleic acid in the breast milk is much lower because they're eating so little linoleic acid in their diet. If you think canonically about what a vegetable is, it's the part of a plant that it doesn't want you to eat. Vegetables don’t have a role in human health unless you want to go to great lengths to detoxify them. If you want to do vegetables, ferment the heck out of them and maybe do something like sauerkraut. Even some fruit can be problematic for humans. [88:10] Is There Really A Connection Between Eating Meat and Colon Cancer? We've been cooking meat for more than a million years. Calcium is an essential part of every human diet, whether you're getting it from bones or you're getting it from good sources of dairy. When you have more calcium in the diet, you tend to see lower rates of colon cancer. Overall, we should go back to the idea of what's evolutionarily consistent, and we try to understand that as best as possible to inform our behaviors. AND MUCH MORE! [13:07] Fasting: Why it’s Simple, Easy, and Effective Multiple studies show that a person’s maximum growth hormone rises around day five. Fasting gets rid of bad cells that contain bad DNA. Fasting doesn’t eliminate senescent cells or cells that live too long; they recreate a new one by stimulating a stem cell. An mTOR pathway is an anabolic pathway. Variation in the diet is important. Feast famine cycling is a strategy of diet variation where we fast. Still, we must remember to feast, as feasting is as important as the fast today. [22:49] Benefits of Hormesis The premise of Hormesis is the adaptation of stress where you become stronger. Change your exercise just like we have to change our diet, create new stress, force the body to adapt again, and continue to get healthier and better. People have different adaptations, and we must understand and listen to our body to ensure that it’s adapting to the stress we benefit from. Hormesis considers fasting as a therapy, a therapeutic or healing state. Some signs of the body not adapting to the fasting stress are gaining weight, spotting, and trouble sleeping. [29:13] Glucose and Ketones In fasting, you should see glucose trending down and ketones trending up. Stronger mitochondria mean burning fat more efficiently. Ketosis is a stress to mitochondria. When the body fasts, it knows what to do. Part of it is getting at these mitochondria and powering these little powerhouses up so the body can push out toxins out of the cell, creating the energy to make hormones and make your day amazing. [35:18] Gene Triggers for Disease Epigenetics is like software; It can be changed and adapted. And so, most diseases are epigenetics. People have a stressor that can turn on or trigger a gene. Fasting and Ketosis are ways to down-regulate stressors. By feasting and famine, we create stress on the microbiome, and we create diversity. The microbiome significantly affects a person’s cells throughout the body. Thus, creating a diverse microbiome in the gut leads to a better immune system, brain, and health. [44:45] Metabolic flexibility Ketosis is a state and not a diet. People are meant to go through times of Ketosis but staying in one state or diet too long creates absolute monoculture or a lack of microbiome diversity. As a cycling woman, Fasting and Keto does well with Estrogen but do not on Progesterone. Therefore, there are two different diets for Estrogen and Progesterone. [00:35] Gaining Weight and Experiencing Health Issues As A Fitness Model At one particular fitness show, Dr. Amie started gaining weight instead of losing it. Everybody knows their body. You know when your body is off. Plus, Dr. Amie was tired, and her hair was falling off. The doctor told her to eat less and exercise more. For Dr. Amie, that wasn’t possible. Six diagnoses later, a doctor said she had hypothyroidism. [04:15] How Long Does It Take For Conventional Medicine To Diagnose A Thyroid Disorder? Doctors are looking at a standard lab range, which is huge. So, it’s challenging to know about thyroid problems with conventional medicine. Some people see between six and ten doctors before learning about hypothyroidism. Amie knows someone who saw forty doctors before she was diagnosed with hypothyroidism. It’s different for everyone. However, if you know something is wrong with your body, then you can’t stop searching for answers. [05:05] The Symptoms To Pay Attention To For Thyroid Disorders You may have a thyroid disorder if you are gaining weight with proper diet and exercise. There are other symptoms of thyroid disorders: Hair loss Fatigue Constipation Hypo is low and slow. Your mood will be depressed, your energy will be down, and your ability to burn fat will be down. [11:55] The Role Insulin Resistance Plays With An Underactive Thyroid “I see insulin resistance in about 99% of my thyroid patients.” -Dr. Amie The thyroid gland is the ultimate master gland of all of your trickle-down hormones. If we are living a lifestyle of high carbs and high sugar, we are actually causing insulin resistance. This type of lifestyle does produce a ton of inflammation. High insulin levels will inflame the thyroid and cause the thyroid to not produce enough hormones. Inflammation is beating up the thyroid gland. [14:00] True or False: You Cannot Do Keto With An Underactive Thyroid False! Keto is by far the best way of eating for hypothyroid patients. When there is inflammation, keto can be a total game-changer. Keto will improve inflammation. Therefore, you can improve your thyroid production. [20:30] Is Long-Term Ketosis A Good Idea For People With An Underactive Thyroid? Being in ketosis for years without a break can lower your 3T3 levels. Usually, it’s not a huge issue because it only lowers those levels a little bit. Instead, Dr. Amie says to come out of ketosis everyone once in a while. Break out of ketosis; that’s all you need to do. Eat a sweet potato once a week. It will keep your thyroid gland active. [28:20] True or False: You Can’t Fast With A Thyroid Issue False! When we're talking about the thyroid, we have to take into account the adrenal glands and cortisol production. Adrenal fatigue is blown out of the water a little bit too much. We do have to think about stress on the body and how it's going to affect your cortisol production. You can’t deny the benefits of fasting. If you wake up and you are not hungry, do not shove food down your mouth. If you wake up hungry, then eat. Your body gives you signals all the time; listen to them! [33:00] Always Choose To Focus What Is Within Your Control 80% you can control; 20% you can’t control. You can control your choices and what you put into your mouth. Also, you can choose what products you put on your body. Make sure you limit down your exposure to toxins. If you try to be perfect, you're just going to be at a standstill. The most serious issues in modern society revolve around our eating habits and stress. - Always eating high-glucose food will lead to the development of hyperemia and insulin resistance. - Every time we eat, we raise our insulin levels slightly. So, if you snack and graze for hours daily, you constantly overload your system with insulin drops. [20:29] Don’t Want To Add Fuel To The Fire? Reduce Your Carbohydrate Consumption - Glucose, the simple sugar itself, is a hundred percent dependent on insulin to get into ourselves and provide our body with fuel. - The more carbs and sugar you eat, the more insulin you’re going to produce in response - Protein has many functions in the body, so there’s minimal insulin response when it comes to eating protein. - Insulin response in dietary fat is negligible. - To prevent this disease from happening or getting worse, minimize carbohydrate intake and start a ketogenic diet. [43:40] The Positive and Negative Effects of Having Low Levels of Insulin - A Longer ketogenic diet is not that problematic for men. - Most people inadvertently spike their insulin levels because of the state of society and our relationship with food. - Megan encourages carb cycling a few times a week for hormonal benefits - It’s okay for women expecting a baby to eat fewer carbs during the first couple weeks of their cycle. Still, those carbs can be good for progesterone in the second half of the cycle. [51:43] False Studies And Misconceptions About Fasting You’ll Need To Avoid - When reading a study, you’ll need to look at the methodology and parameters used. - False Studies usually look at forms of time-restricted eating, but the controls are not very good. - Studies that say fasting does not work don’t have controls, and the assessment of the population being tested is not there. [57:15] Insulin-resistant and metabolically healthy Patient: What Is The Result? - Patients who do 36 hours of fasting three times don’t have loose skin. Nina Teicholz | Eat MORE Saturated Fat, Busting Myths on Red Meat, Why Fish Oil is Toxic, & Why Plant Based Diets FAIL KKP: 552

She is an investigative science journalist and leader in nutrition reporting who is challenging the conventional wisdom on dietary fat–particularly, whether saturated fat causes heart disease and whether fat really makes you fat. The New York Times bestselling author of The Big Fat Surprise. Teicholz also serves as Executive Director of The Nutrition Coalition, an independent non-profit group that promotes evidence-based nutrition policy. She is one of a new generation of researchers arguing that diets lower in carbohydrates are a scientifically sound approach for reversing nutrition-related diseases. For more than half a century, we’ve been told to eat a diet high in grains, low in fat, saturated fat (and cholesterol), but the last two decades of research have led a growing number of scientists to conclude that this diet, despite being rigorously tested, could never be shown to prevent any kind of disease. Teicholz’s work also explains why this diet has remained official policy for so long: the roles played by crusading scientists, the food industry, and more. In this episode, Nina opens the show by explaining her obsession with studying fat. Nina realized that people were afraid to talk about fat because the food industry was pushing their agenda. During her research, Nina came across studies pointing out the flaws in a low-fat diet. However, so many scientists at universities were terrified to talk to Nina about fat. Why? Because people in the food industry were paid to give scientists a hard time. Nina realized there was something really wrong going on here that had such enormous implications. Nutrition science from the very beginning has been heavily influenced by the food industry. For instance, the vegetable oil industry wanted to go after people for attacking vegetable oils in any way. You see the same tactics happening today on social media. [08:55] Polyunsaturated Fats vs. Saturated Fats vs. Monounsaturated Fats Fatty acids are long carbon chains. Poly means many. Polyunsaturated fats have many double bonds. Each time there's a double bond in the chain, it kinks the chain. Some examples of polyunsaturated fats: Corn oil Safflower oil Sunflower oil Canola oil Monounsaturated fats are the same carbon chain but with one double bond. If you want to use oil, it’s better to use olive oil because it only has one double bond. Saturated means that the carbon chain is statured with hydrogen, and there is no double bond. It is a flat chain, and it makes a solid like butter. Saturated fats are actually the best for cooking, and they're the healthiest for eating because they do not oxidize or cause inflammation. [17:55] What Went Wrong In The 1950s With Ancel Keys and President Eisenhower The idea that fat, cholesterol, and animal foods are bad for health began in the 1950s. The US was really in a panic over the rising tide of heart disease, which had been virtually nonexistent in the early 1900s. In the 1930s, heart disease became the number one killer. A panic started when President Eisenhower himself had a heart attack in 1955. Eisenhower’s doctor was convinced by Ancel Keys that saturated fats and dietary cholesterol cause heart disease. Plus, Ancel Keys got his ideas adopted by the American Heart Association. Ancel came out with a statement saying to avoid saturated fat and cholesterol in order to prevent heart attacks. We are still dealing with this in 2021. [23:00] Why Are Seed Oils Approved by the American Heart Association? How is it possible for the American Heart Association to continue to ignore so much scientific literature? More than 20 papers published in the field have concluded that we got it wrong on saturated fats. There is no data to justify the authorities' limits on these seed oils. It’s challenging to trust the government with our health when they recommend seed oils. [31:00] Sorry Vegans, Meat-Eating Is Healthy For Humans Nina did not know how controversial red meat was until she put a picture of it on the cover of her book. Sadly, many people think that if you eat meat, you're a bad person, you don't believe in climate change, and you're not doing your part to protect the climate. There's this moral revulsion that has been created against meat. Influencers in the spheres of science and public health have vilified one of the healthiest foods on the planet. Meat was developed by humans in order to have a convenient and cheap source of protein. [33:15] Myth: Meat Causes Diabetes Diabetes is caused by elevated blood sugars. Sugar causes elevated blood sugars, so do carbs. Where's the sugar in meat? It's just nonexistent. It's impossible that meat would cause diabetes. Red meat consumption has gone down around 28% since 1970. Whereas, diabetes has skyrocketed out of control. [34:15] Myth: Red Meat Causes Colorectal Cancer The WHO decided that red meat and processed meats cause colorectal cancer. This decision was based on these kinds of weak science called epidemiological or observational studies that show associations instead of causation. The data they used was self-reported dietary data, and we all lie about what we eat. There needs to be a more significant discussion about the bias against red meat. [38:30] Why People Are Pushing Vegetarian and Vegan Diets The animal rights movement does not want people eating animals. The Seventh Day Adventist Church has a religious belief that people should eat a vegan diet.Plus, the food industry has an enormous investment in plant-based foods. Also, many companies want to hop on the climate change bandwagon. Many vegan burgers have vegetable oils that are not healthy. [41:30] Myth: There’s a Correlation Between Red Meat Consumption and Heart Disease The original reason that red meat was thought to cause heart disease was based the fact that it contains saturated fat and cholesterol. However, research shows that saturated fat and cholesterol do not cause heart disease. Therefore, foods containing saturated fat and cholesterol don't cause heart disease. The correlation between saturated fat, cholesterol, and heart disease has been more rigorously and extensively studied than almost any other scientific question in the history of nutrition science. [47:15] Which To Cut First: Smoking Cigarettes, Processed Sugars, or Vegetable Oils People smoked historically for hundreds of years tobacco, but they did not get cancer or heart disease until the introduction of sugar. Nina says that smoking is probably safer than processed sugars or vegetable oils. Between sugar and vegetable oils, Nina says that vegetable oils are safer. [00:40] How Robb Wolf Started On His Health Journey and Writing Three Books Robb’s mom had a lot of health problems. He had this sneaky suspicion that better food and exercise could lead to better outcomes. So, Robb was interested in health at an early age. He was a California State powerlifting champion and got into Thai boxing and jujitsu pretty early on. It led to an undergrad in biochemistry, and then he was looking at either medical school or the research track. In college, Robb was experimenting with his diet. He was tinkering with a low-fat, high-carb vegan diet. Robb ended up making himself very sick. On his vegan diet, Robb was on a blood sugar roller coaster all the time, he had all these gut issues, and his depression was in pretty rough shape. Eventually, he changed over to a paleo diet, and it saved his life. Paleo, keto, and carnivore all revolve around protein. Providing nuance can be confusing when starting a new lifestyle. It’s valuable to look at a variety of different people when finding advice on the internet. Learn from people who have had success in their lifestyle and are flexible.
