More about today’s guest: Established in 1921 in the Marche region, Tombolini – a family owned estate – is one of the most historical names of Verdicchio dei Castelli di Jesi. Already in the 50s Giovanni Tombolini fully understood the potential of this autochthonous white. He focused on vinification in steel, imports winemaking skills from Piedmont and carefully selects the best grapes. He is among the firsts to have adopted the “amphora” bottle, icon of the denomination. With the brand Castelfiora, which he produces in the newly built winery in Staffolo (1972), he has writen an important chapter in the history of the denomination. In the 90s, his daughter Fulvia Tombolini extended the (Verdicchio) vineyard to 30 hectares and started their journey towards sustainable viticulture. In 2013, the call of the land became irresistible for Carlo Paoloni, son of Fulvia, who quit his job in investment banking in London to devote himself to the family business. With the 2020 vintage, he launched a project focused on exalting the unique terroir of Staffolo and experimenting with new winemaking techniques. Symbol of the new course is the Tombolini "100 years" amphora, a proprietary bottle created to contain only the best Verdicchios from the Tombolini estate.
