He also serves as Wine Director at Restaurant Olivia, where he curates an Italian-forward program with global breadth. Scott earned his Master’s in Wine Culture from Slow Food’s University of Gastronomic Sciences in 2019 after two years living and studying in Piedmont and Tuscany. He is one of only 22 Italian Wine Experts certified by the Vinitaly International Academy and holds additional credentials as a Certified Italian Wine Educator, Certified Wine Educator, WSET Level III, and Certified Sommelier. More specifically, the winery is located in the small village of Ama, which dates back to the 12th century. The winery is known for producing wines of great finesse and quality, particularly its single-vineyard Gran Selezione red wines. In addition to its wines, Castello di Ama is also recognized for its contemporary art collection. The winery is also recognized for its commitment to sustainable viticulture, modern winemaking techniques, and integration of contemporary art within the estate. The founding of Castello di Ama dates back to 1976, when four families originally from Rome set out to restore the prestigious wine estate to its previous splendor. Lorenza Sebasti, daughter of one of the founding partners, joined the organisation in 1988, and has since risen to the role of CEO.
