Part 12 - Peter Ballerstedt on Cows Being Essential to Environmental and Human Health

Today we have Peter Ballerstedt who has a Phd in forage production and utilization. He's also an expert in ruminant nutrition (this means cows, sheep, bison, etc.) He travels around the US and world giving lectures on the necessity and benefits of animal agriculture, for the health of our environment and human nutrition. I love him because he presents facts that go against the mainstream narrative and the animal rights propaganda that is absolutely rampant and taking over the conversation. He's one of the only voices we have, so appreciate him and listen to his wise words.

Part 64 - Did James Wilks Get Anything Right Against Chris Kresser? With Paul Saladino MD

Alright everyone, I'm fired up about this one! Dr. Paul Saladino was up in LA yesterday and we recorded some gold here. We spent the weekend digging through studies to give the much needed rebuttal to the "debate" between James Wilks and Chris Kresser on the Joe Rogan Experience podcast. For those not familiar with this, it was a huge deal. Joe Rogan has the most popular podcast in the world (by far I believe) with many millions of worldwide listeners and viewers on youtube as well - per episode. James Wilks is one of the producers of the Game Changers - the most recent installment of vegan propaganda films. Listeners will know we already put out a feature-length film debunking his film on YouTube, aptly named Game Changers DEBUNKED. We just posted a document at sapien.org/gamechangers with 156 studies and 57 resources listed to go along with the film. We put many of the studies on screen, but due to limited time couldn't reference each one. So here's a bit more context: Chris Kresser went on the Joe Rogan podcast and debunked the Game Changers. He did a great job and we included some of that footage in our film with his permission. James Wilks then went on to defend himself, but instead, attacked Chris personally and used many tactics to avoid answering the simple question of "why do you think red meat is bad?" He did catch Kresser on some things, I think. But for many points, he actually didn't if you look more into it. James just caught Chris off guard and cited studies Chris wasn't familiar with. Paul and I looked into those and found out James was actually wrong, was completely overstating what the study said, or made false claims about the dates of references that were central to his criticism of Chris. I'll leave it at that for now and get on to the show. Hello, hello good people, I hope you all had a joyous Thanksgiving. I certainly did with some friends up in Seattle for a SAPIEN style dinner, finishing the Game Changers DEBUNKED film, having the awesome Meat-Up and film viewing, hanging with everyone's favorite Dr. Ted Naiman, and then going to Mike Mutzel's house and backyard farm for a podcast. A bit more info on each. Mike Mutzel is known as metabolic Mike and has a longstanding podcast called High Intensity Health - go check him out, he's a great guy. Everyone should be familiar with the Game Changers DEBUNKED film by now. There's 2 versions out on youtube as of late - one with the "deleted scenes" and one with just the info and none of the gags. When we started this on Halloween, Shawn Baker, Chris Kruger, and I had the idea to do some skits and have some fun with this. I appreciate the fact that not everyone is looking for that so we have both options! He does not use any GMOs or glyphosate. His ever evolving grazing strategy allows most of his pastures a recovery period of over 360 days. All of these practices have led to the health of the soil, mineral and water cycles to greatly improve and of course the quality of the agriculture and livestock he produces as well. Dr. Jaime Seeman AKA Dr. Fit and Fabulous is a board certified Obstetrician-Gynecologist with a background in Nutrition, Exercise and Health Science. This was an awesome one - so many topics my guests haven't covered yet. I wish we recorded some more updated stuff about the blood spinning tests she's doing for the Game Changers DEBUNKED mini-doc. She ate 5 eggs and 3 pieces of bacon and spun her blood in a centrifuge and it was - guess what - clear. The Game Changers mockumentary tried to say animal foods caused cloudy blood plasma. They did a little "experiment" in the film and showed it was cloudy after a beef burrito and clear after a bean burrito. They are outright liars and cheaters I tell ya! They are deceiving the world with false information. Two engineers in Seattle also debunked this by eating huge amounts of lamb and milk fat and producing clear blood plasma as well. Dr. Jaime is going to do a 2nd experiment tomorrow and match the amount of fat and calories of a beef and cheese burrito with a vegan burrito and see if it produces cloudy blood. What's likely going on here is that eating a high carb AND high fat meal creates more triglycerides in the blood for a longer time. There's more to this that will all be explained in the mini-doc. Hello. We're back. I'm Brian Sanders and I'm excited to share another great episode with you lovely people. Dr. Ken Berry is the author of the great book "Lies My Doctor Told Me," he's a speaker, he's got an awesome and very popular YouTube channel, and he's a great doctor who realized he was doing everything wrong and had the humbleness to admit this was so and reverse course. His own health was failing him and the advice he was giving his patients was failing them as well. I love these people who can man up to their mistakes, admit they didn't have all the answers, and work tirelessly to make up for it. He's got a bunch of great takeaways to offer so listen up to the good doctor! Now I've got a few updates - we just started an impromptu project - a mini-doc debunking the latest installment of vegan propaganda called the Game Changers. If you haven't heard of this, it's a "documentary" on Netflix about a few athletes who eat only plants and think everyone in the world should do the same thing. They misrepresent science and purposely deceive a huge population of the world who is not well-versed on food and nutrition and might believe that because a few genetic freaks are doing midly well eating a few salads and James Cameron who has $140 million invested in pea protein which they make the fake impossible burgers out of say that this is how humans should eat that it is actually true. I could go on and on about this, but I won't because this short film will say it all much better. We got a great team together on short notice including Shawn Baker, Paul Saladino, Mark Sisson, and Tim Shieff who used to be called the Vegan Prince and was actually in the Game Changers film. That's until he realized the diet was destroying his life and he moved to embrace animal foods and basically immediately restored his health. We're filming some comedy reenactments of some of the stupid so-called "experiments" they do in the film tomorrow with some of these guys. We're going to be releasing this on YouTube for the whole world to see for free on November 27th the night before Thanksgiving. pathophysiology and biomedical science at BYU in the physiology and developmental biology department and the class he teaches is pathophysiology His undergrad and MS was exercise physiology and he loved learning how the body adapts to exercise He got into his current research interests by stumbling upon research on adipose tissue as an endocrine tissue that secretes anti-inflammatory and pro-inflammatory hormones Insulin resistance is at the root of many diseases Type-2 diabetes is at its core a disease of insulin resistance where there is too much insulin, the pancreas is working so hard to produce insulin but the body is not responding to it as well as it was before Teaching pathophysiology exposed him to the link between insulin resistance to almost all chronic diseases and the more he covered more diseased states insulin resistance was always relevant Clinicians typically look at fixing individual problems with separate medications when we could just target the underlying issue Insulin resistance is a disease of too much insulin and part of the insulin resistance is caused by too much insulin it's a vicious cycle Too much of a stimulus, system will reduce sensitivity to this stimulus If insulin resistance is relevant to every chronic disease you have to resolve the insulin resistance if one of the main causes of insulin resistance is hyperinsulinemia then the best way to reverse course is to reduce the insulin and low-carb is the easiest strategy His concerns about vegan diets What he tries to focus on is the common grounds, keto or low-carb, vegan, whatever diet you choose the thing in common needs to be avoiding processed foods, at the end of the day, the goal is to lower insulin If a person is in ketosis, then you know their insulin is low, it's a nice metric to know you are controlling insulin because you can't make ketones if insulin high Of the three macronutrients, carbohydrates have the greatest insulin spike and carbohydrates are the only non-essential macronutrient Anyone attempting to control insulin should consider the insulin to glucagon ratio which Glucagon is one of the hormones that act in opposition to insulin, released in the alpha-cells of the pancreas One of insulin's main actions is to lower blood glucose, if it is elevated to get glucose into our cells which is required to live Glucagon's main job is to elevate blood glucose In a fasted state you will have a low insulin to glucagon ratio, because glucagon triggers the mobilization of energy from stored energy [around 20:20] When we are eating a low-carb high-fat diet, this insulin to glucagon ratio will remain similar to that of fasting so that we can mobilize energy not store it On a low carb diet high fat diet, we are eating but we are mimicking the state of fasting Eating carbohydrates frequently throughout the day almost guarantees insulin will be elevated all day long In a fasted state the insulin to glucagon ratio will be around 1, on a standard american diet that will go up to around 10 and a low carb high fat will go up to maybe 2-3 A lot of people are scared to eat protein on a ketogenic diet and instead people eat a lot of pure but this is not found in nature Context matters, glucose interferes with the insulin response to protein [around 29:45] You can not afford to spike insulin from protein in a low carb state because you will shut down glucogeonesis which makes glucose in the fasted state and you will go hypoglycemic Protein on a high carb diet amplifies the insulin response to glucose The main substrate for gluconeogensis is lactate not amino acids Gluconeogenesis is demand driven Ketones spare muscle break down by providing an alternative fuel source Transitioning into ketosis you go through a brief phase of using amino acids from muscle for glucose but you transition out of that once you get into ketosis The difference between fasting and starvation is breaking down muscle as last resort The glycemic load of the carbohydrate in the diet matters for the insulin response Dangers of low-protein "longevity diets" We know in experimental models one of the keys to longevity is to lower insulin Promoting a high carb diet for longevity isn't logical because carbohydrates have the biggest insulin response [around 40:20] Insulin increases mTOR much greater than amino acids do so the argument to lower protein to lower mTOR for longevity by replacing protein with carbohydrates is not achieving this Soy is a complete protein however a normal response to exercise in both females and males is to transiently increase androgens (e.g. testosterone) and animal proteins don't change this response but when a man takes soy, it abolishes this androgen spike from exercise (studies haven't been done in women) Pea protein is about half as absorbable to animal proteins You do not need carbohydrates for the insulin spike to build muscle The difference between lean gains vs bulking and cutting In order to make ketones you need fat to enter mitochondria via carnitine Carnitine is the essential transporter for fatty acids If you are focusing on protein, fat, and carnitine in order to maintain a good insulin to glucagon ratio, there is nothing better than a piece of red meat Insulin slows metabolic rate and ketones accelerate metabolic rate Brown fat is enriched in mitochondria and is enriched with mitochondria in contrast to white fat and these mitochondria behave differently Mitochondrial metabolism is "uncoupled" in brown fat and "coupled" in white fat Ketosis helps "waste" energy so to speak Ketones help turn white fat cells to brown fat cells Insulin turns off mitochondrial uncoupling Hormones dictate what the body does with food consumed to mobilize or store Ideas behind personal fat threshold and carbohydrate-insulin theory of obesity Inflammation and fat create a perfect storm for creating insulin resistance throughout the body The personal fat threshold explains why slim people can be insulin resistant and overweight individuals can be metabolically healthy Fat storage can differ among different ethnicities You can eat a high carb diet and not gain weight and lose weight if
