Today, I am blessed to have here with me Dr. Sylvia Tara. She holds a Ph.D. in biochemistry from The University of California, San Diego, and an MBA from the Wharton School of the University of Pennsylvania. She was a healthcare management consultant with McKinsey & Company and has worked for the world's largest biotechnology companies. After an extended battle with fat, Dr. Tara became fascinated with its resiliency and embarked on a mission to better understand it. This book culminated in years of research and interviews with physicians, patients, and leading scientists. The Secret Life of Fat will forever change how you think about this misunderstood organ. In this episode, Dr. Sylvia Tara reveals the inspiration behind her fat research. We usually think fat is simply storing calories. What most people don't know is that fat serves many purposes. [00:30] About Dr. Sylvia Tara Sylvia gains weight really easily. Her whole life, she watches people eat whatever they feel like, drink whatever they want, and not gain any weight. So, Dr. Sylvia decided to understand fat once and for all. She went on a big expedition to really understand fat. She wanted to know why she would gain fat easier than other people. The Secret Life of Fat is based on all this research! We think of fat as storage for calories; however, it’s so much more than that. [02:25] What Is Fat? Fat is a complex endocrine organ that has multiple functions: Storing calories. Producing leptin – which has a great effect on our brains, our bones, and multiple organs. Creating adiponectin – which has a lot of impact on where our fat is stored. [03:25] What You Need to Know About Leptin Our fat produces this hormone called leptin. It's the biggest producer of leptin in the body, and fat releases it into the bloodstream. Once leptin goes to the bloodstream, it goes to your brain; it'll tell your brain that you’re overall satisfied. Basically, the brain will know that you are good, there's enough nutrition in the world, and you are okay. Leptin will also communicate with your muscles. It tells your muscles that it's okay to expend energy because you have enough nutrition. When we start to lose fat and begin to lose weight, say 10% or more, we reduce the amount of leptin we have. So, people who've lost 10% or more of their body weight respond enormously to food. Overall, once you've lost weight, you have to eat less than someone who's at that weight normally. It is why diets don’t work! [07:15] The Role of Adiponectin Adiponectin is more or less telling fat where to go. When we have dietary fat, adiponectin will guide the fat in our bloodstream to the right parts of our body. So there's different kinds of fat, there's white fat. It's right under the skin, it's in your thighs, buttocks, arms, and it's actually the safest places to deposit fat. If you're going to have some fat, those are the places to put it. There's also visceral fat; it sits underneath the stomach wall. It is the more dangerous fat that's nestled against the internal pancreas organ. There's brown fat – it burns calories instead of storing calories. Plus, there is beige fat – it that can turn brown when we exercise. Overall, adiponectin will help guide the fat you eat and put it into the right place. [09:20] How Exercise Can Help Adiponectin It’s around 20 hours of jogging a week to get adequate levels of adiponectin. That is when your body will start to shift around where your fat is. High-intensity interval training will also help raise your levels of adiponectin. You have to exercise a lot before it starts to affect you. It's best to work with your diet and do some exercise. Don't rely on exercise alone! [11:10] How To Get More Brown Fat Brown fat is actually used to create heat. We have brown fat around our heart; we have it around the clavicle areas and our spines. Having brown fat around those important areas is critical. These areas need to be heated even when we don't have exposure to cold. Beige fat, which was discovered last decade, is the fat that can turn brown through exercise. The more you exercise, the more you can increase your levels of brown fat. Exposure to cold will also increase your brown fat. [13:45] Women Produce 33% More Ghrelin Than Men After Exercise Women are designed just to have more fat. There are many reasons for this: Fat produces estrogen. Fat is linked to our reproducibility. When women exercise, they have a different reaction than men. Women’s bodies produce ghrelin after exercise, and it's a hormone that's released from your stomach. If you burn off 600 calories or so, women produce 33% more ghrelin than men. There's all kinds of dieting tips for women versus men because women are different. [17:30] How Women Can Lose Body Fat Women have to be really patient, and you have to understand where you are on the spectrum of fat. Everyone has an individual fat blueprint. You have to understand your fat, and you have to be really forgiving of yourself. Another issue with women is that they have something called dichotomous thinking. [22:05] The Role Of How To Use Intermittent Fasting For Fat Loss Our growth hormone peaks at night. So, fasting during the nighttime will benefit your body because eating mitigates growth hormone levels. You want growth hormones because it’s a great way to burn fat. If you sleep adequately, you're increasing your levels of leptin, which means you're going to be a little bit more satiated the next day during fasting. [26:30] Strategies To Keep Insulin At Bay Fiber will bring down insulin. Eating higher protein diets, lower carbs, and obviously not a ton of sugar will also help keep insulin at bay. Fasting enables you to manage insulin, and it helps with insulin sensitivity. [31:35] The Role of Genetics In Fat Storage To manage your fat, you have to work harder if you're at a genetic disadvantage. Some people tend to have a much higher appetite because they have a certain variant of the FTO gene. [35:30] How Environmental Factors Affect Fat The Four P’s: Pesticides Plastics Preservatives Parabens Overall, it's important to really watch what you eat and watch what you put on your body. Think about what's really in the food that you eat! [43:45] Testing Your Fat The best way to test your fat is a CT scan. Sadly, there is no easier way to find out. The last few years have been Jeremy putting in the time and effort to become more knowledgeable and meet more people. This is just the beginning for Jeremy.   [16:30] Navigating Self-Limiting Beliefs Mental health and mindset are kings. It is essential to step back and think about your childhood. Where did these self-limiting beliefs come from? We may not even be conscious of these thoughts we have been having. A typical example is your parents getting a divorce when you are nine years old. From that event, we start to tell ourselves so many different stories. We build perceptions, and we think they are the truth. People do not know they are capable of these great things. Build self-awareness as to why you are having these thoughts. Who are you spending your time with? If you are with people who are constantly complaining and bringing you down, that is what you are going to manifest.   [22:25] Getting Out of the Victim Role    Our struggles are part of our unique journeys. Adversity will manifest in our lives in some way. You will be able to connect on such a deep level with so many people. Find the silver lining – it’s all about perspective.   [24:30] Family Who is Unsupportive of Keto Give them the opportunity to understand. Tell them why you are trying the lifestyle and ask if they will support you on the journey. A lot of the time, they will still think you are crazy. Prioritize yourself – so many times we will put other people first. Fill your cup up first. If you feel terrible every day, how are you going to show up for other people? Small changes will profoundly manifest into bigger ones. Consistency is king. Jeremy doesn’t train that hard. He just lives a balanced life.   [30:30] Attitude and Enthusiasm   Jeremy has always had a childlike joy with a goofy sense of humor. There have been times where Jeremy has gone through struggles. He handled it by keeping them to himself. He credits his optimism to his dad, his biggest hero. His Dad always preached gratitude from a young age. He started giving Jeremy gratitude stones. If they ever came across a problematic situation – Jeremy’s dad would remind him of how lucky they are. Always treat people with respect and kindness. Sometimes, Jeremy does not do a good job at this. However, he still works on bringing good vibes to a room.   [40:00] Exercising on an Airplane Jeremy posted a video of him doing dips on the airplane and lunging down the aisle. Jeremy’s body was feeling stiff, and he needed to stretch. Some people hated his video – if he weren’t white, he would have been arrested. Street performers inspire Jeremy because they share their gifts with the world.   [43:45] Causes of Inactivity We spend eight or nine hours straight sitting. After work, we come home and relax. We could spend ten or twelve hours a day sitting. The seven areas of the world with the highest quality of life do not even workout. They are active throughout the day – they move every twenty minutes. Find alternative postures. Jeremy posts a lot of videos on this. Standup desks are trendy right now. They are not a great solution because if you are standing in a fixed position – it’s not that different than sitting all day. A ten-minute walk will do so much for you, especially outside. It can boost your creativity by up to sixty percent. Find someone to hold you accountable.   [50:40] Most Exciting Thing Jeremy is Working On Jeremy is launching a nonprofit next month. He is bringing fitness to urban areas – places where there might be poverty or crime. He wants to install bars to do pullups and do kid-like things. Jeremy wants to teach them simple things to move their bodies and have fun. He is starting in Miami then moving to South America. Jeremy is all about multiple impact streams. Today, I am lucky to have here with me Prof. Brian Peskin, a world-leading scientist specializing in parent EFAs — termed PEOs — and their direct relationship to cardiovascular disease, cancer, and wound care (both traumatic and chronic).   Brian has always had one goal – to help people — regardless of personal sacrifice. But despite his integrity, Brian has suffered a lot of criticism and even slander as a reward for his hard work. Brian is not alone. Many other health researchers have also spoken the truth and were chastised for it.   Brian’s great genius is “connecting the dots” between established sciences that usually remain separated, and coupling his findings with real-life results. He combines theory with practicality in a very unique way. Even though Brian does not always take credit for the science he has studied – he is often only the messenger of the information already published in leading medical textbooks and medical journals — he has also been called a “quack.   Brian attended the world’s leading engineering institution, Massachusetts Institute of Technology (MIT), where he studied highly complex mathematics, engineering and physics, along with probability and statistics. He has also studied biochemistry and physiology. Brian’s various fields of study give him a unique systems perspective when applied to health and nutrition. Science says one thing, and society is doing the opposite. Brian says more people need to be writing the science.   [12:50] You Never Build on the Past in Medicine   In medicine, you don’t look into the past – it doesn’t exist; it all starts today. Medicine is looking at studies, not science. Studies are open to misinterpretation. Ask your doctor what the metabolic pathway that causes your health issue is. Pathways are science. If your doctor doesn’t know the pathway, then don’t believe a word they say. Brian uses science to talk about food.   [17:30] Solving Type 1 Diabetes   Brian could not bring back a pancreas. Stop eating 4-6 times a day; we are not meant to be a goat. People who don’t know what they are talking about are putting others on an awful path. The diabetes epidemic has to stop.   [19:45] Stop Eating Every 2-3 Hours Brian has no idea why people think they need to eat every 2-3 hours. Carbs are sugars. You get just as much fat eating complex carbohydrates. The pancreas does not store insulin very well. If you eat six times a day, you blow your insulin reserve. The pancreas doesn’t know how to react to you eating so frequently. Eating every two to three hours came from the food industry. How much sugar is in your bloodstream? Less than a teaspoon. Brian double checked, and it still came back to one teaspoon. This is why exercise became a second job for some people, to burn off all the access sugar we are intaking.   [24:30] One Teaspoon of Sugar If you eat carbs, you’ll be using the sugar when you exercise. However, you would rather your body burn the fat (unless you are running a marathon). Most people quit their training program because it doesn’t work, and they are being told the wrong thing from their trainer.   [25:30] What Time to Cycle in Carbs Early morning is the best time to eat carbs. You don’t want to eat carbs at night because your blood sugar will stay high all night. For every ounce of carbohydrates you eat, you will need three ounces of water. If you eat the carbs at night, most likely, you are not doing that much activity. Make sure the carbs are good, get the bang for your buck. You can add carbs later in the day if you are going to stay active. If you eat carbs and you feel horrible, you’ve overeaten.   [32:20] Eating Too Many Carbs Your body wants it back to normal, so it needs to get the sugars out of the body. Exercise your body to get rid of the sugar, or burn it by starving. Brian says he doesn’t want to store it to begin with.   [34:00] Eating Fats and Protein to Excess Brian says you can’t overeat fat because your body physically won’t let you. Your appetite will eventually go away, and you will no longer want to eat anything else. To get no carbohydrates is virtually impossible. If you eat just fats and proteins, none of that protein is going to fat. 58% of a steak is water after it’s cooked. 70% of that steak is burned up in digestion. Most people don’t know this and have never seen it in writing.   [36:30] Eating Steak with Ketchup You’ve introduced carbohydrates when adding ketchup to steak. You can have some carbs; you don’t need zero. For instance, if you want to have a sandwich, have one slice of bread. Carbohydrates are very cheap and inexpensive. Fats, proteins, and cheeses are expensive.   [38:00] How to Gain Fat Faster Fat does nothing on its own. Minimizing carbs is always the answer. The average person can be just fine with minimum carbs. Do not have a high carb meal after a fast. The smartest thing you can do is a steak coming off of a fast. Do not eat anything with carbohydrates.   [42:00] Never Use Vegetable Oil or Fish Oil Smoke 2 packs a day for 28 years, how many people will develop lung cancer? 16% of people will develop lung cancer. If you give processed oil to people, most people will develop heart conditions. Fish oil goes rancid immediately. Dermatologists don’t have a clue why skin cancer rates aren’t going down. Sometimes, dermatologists will even prescribe fish oil to their patients to clear acne. Fish oil destroys your immune system. Brian doesn’t even know what to say. The most pristine fish oil in the world, in moderation, is still wrong. Fish oil doesn’t help anything; it fails at everything!   [52:40] Organic Supplements   Organic isn’t better because of more vitamins; it’s because they lack a negative. Many supplements will have carcinogens in them. If we take carcinogens over a long period of time, we will end up with severe health problems. You want more Omega-6 in your supplements.   [57:15] Diet is More Important Than Exercise You don’t want your appetite going through the roof. With carbohydrates, you can’t exercise enough. You don’t start burning fat right away.
