More about today’s guest: Paolo Tegoni is a gastronome and professor of food and wine studies at various Italian universities and training centers. Throughout his professional career, he has worked as a sommelier in Paris, collaborated on the creation of important cultural exhibitions related to food, and has written—and continues to write—for various agri-food sector magazines. He is also a tireless traveler of wine terroirs, and in 2022, he published his first book titled "Malvasia, un diario mediterraneo" (Malvasia, a Mediterranean Diary), with Terrae Opificio Culturale Enogastronomico. In the book, he explores wines made from different Malvasia grape varieties grown in the vineyards of Greece, Slovenia, Croatia, and Italy. His grandfather used to be the smallest Brunello di Montalcino producer, accounting for a mere 0,46ha’s. That’s where he developed a real passion for wine. After completing his studies in Languages in 2004 he co-founded a wine-oriented advertising agency, Brookshaw&Gorelli. Over the years, he has had the opportunity to consult for many Italian wineries and Consortiums. In 2015, Gabriele started his studies at the ‘Institute of Masters of Wine’. He is now the sole Italian Master of Wine. During the same year, he co-founded KH Wines S.r.l., a company that helps European wineries in export markets. Nowadays, KH Wines holds a significant number of custom-made products designed from scratch, from the sensory profile end of the spectrum, to packaging, to storytelling. In 1990, he opened Sette MoMA Restaurant at The Museum of Modern Art of New York (1990-2002). In 2002 he opened Union Bar and Grill in Great Barrington, Massachusetts (2002-2006), and in September 2001, he opened Il Gattopardo, across the street from MoMA, along with his wife Paula Bolla and his Executive Chef Vito Gnazzo.
